Jose Mier Contemplates the Discord
Frozen Jose Mier is all about the most unique frozen desserts and I scour the internet to find things I think are off the beaten path. Today’s dessert is one of those: chocolate and black pepper gelato. At first I had to do a double take but it’s true. The recipe I found on the Olive Magazine website is for just such a concoction.
I know that the addition of salt causes some flavors to become more intense but the pepper does not work that way. It merely adds some spice to the flavor of chocolate. If you read my earlier post on New Mexico’s favorite ice cream (chocolate chili) you’ll see something similar. In any case, it’s worth trying at home. The sweetness of the chocolate will contrast with the spiciness of the black pepper. An interesting combination that will surprise friends with whom you share this dessert.
I’ve also written about gelato, that cousin to ice cream. Unlike ice cream, gelato is milk-based and not cream-based and the creamy texture of gelato comes from using liquid glucose in the recipe. It also prevents gelato from becoming overly hard when frozen (although I’ve been denied gelato in Rome because the vendor told me that particular flavor was TOO HARD to scoop. So, go figure.
